Making of "Tody"

With some impression of what "tody" is all about, this page elaborates on some details

Here is a scene of our elderly friend [72 years] making his daily routine.

 On top, he performs maintenance work of clearing debris's, repositioning pots.
   
An interesting feature here- a mallet from hard wood is used to "relax" the pod! Remember - It was strapped and being put in a unnatural position, it is necessary to relieve the stress and encourage the inflorescence to continue its productive efficiencies!
   
Other utensils and tools used- a pouch holding a medium size sickle, slicing blade, scrapper and the mallet!

The tidy plastic container is the collection jar where the accumulated nectar from the earthen pots will be emptied into!

It is a straight forward process of sliding the earthen pot from its anchored position, empty it and returns it to its original position.

Collection is done twice daily

1st shift -6.30 am to 9.00 am

2nd shift -3.00 pm to 5.30 pm.

 

More statistic- each tree will have 2/3 inflorescences available for tapping. In single collection, each inflorescence will yield approximately 1 liter of fluid. The productive life of each inflorescence is about 4 weeks.

In this plantation visited, there are 3 climbers for 400 trees. Some figures to work out their output and workload for the day.
The collected fluid that was left exposed for over 6 hours a the tree top, was seen in a foaming stage, meaning fermentation had begun!

The contents are then transferred into 50 liters plastic holding tanks. Fermentation continues for another day before they are ready for the retail outlets.

The custom department will make fortnightly visit on site to verify output and computation of taxes to be levied. As these are duty unpaid products, no sales or releases to unauthorized person is allowed!
